When you buy an already cooked pasta sauce in either the can or jar, it's somewhat cooked in that container. Once that air tight seal is broken, the oxygen and bacteria start to break down the fresh ingredients inside that container, thereby requiring refrigeration to help maintain it's freshness and safe eating. If it's in a can, you can extend it's shelf life by moving it into a glass container, or if you really need it, freeze it and it will hold for about 2 months (maximum). When the sauce is packed, it is airtight. When you open the jar, the air makes the sauce go bad faster. If you leave it out of the fridge, it could get mold and bacteria.
