Looking for more quinoa recipes?

I have one I really like - but would appreciate more. All I can find are recipes that include black beans (not a big fan). Any suggestions??

    I often substitute it for rice, but here is my favorite.

    Quinoa stir fry

    1 cup quinoa, rinsed

    2 cups liquid-any stock, wine or even just water

    1/2 cup chopped toasted nuts

    1/4 cup cheese

    1/2 cup chopped tomatoes

    6 oz fresh spinach

    Toast grain in small amount oil or even dry until golden-add liquid, cover and simmer 20 minutes. Add spinach and stir in until wilted-add nuts, cheese and tomatoes, heat through and pig out!

    The original recipe called for walnuts and parmesan but I have used pecans, almonds,pine nuts and pumpkin seeds and gruyere, provolone,and gouda all with good success.

    I sometimes substitute the quinoa for rice in my stir fry dishes.

    I've also stuffed green peppers with it. Add the normal: veggies, pasta sauce and the like. It's really good.

    While I've not tried this myself, apparently it can be eaten at breakfast. Add some fresh fruit, a little milk and you're set (I guess just treat it like oatmeal).

    I also sautee my fave veggies in a pan and then serve it over cooked quinoa with tamari. It's mighty good.

    Being allergic to wheat, I grind quinoa (I prefer red quinoa) into flour and use it to bake breads, muffins, cookies, cakes, etc. I combine it with buckwheat flour sometimes. Quinoa is an excellent source of protein, so I use it many things. Making baked goods from it is a great way to add more of it into your diet. You can also stir some of the whole grains into traditional baked goods for extra texture and fiber. I also make a great tabouleh salad from it-just cook it, add a little lemon juice, olive oil, chopped parsley, cucumber, green onion, and green pepper (can add fresh tomato too) stir it, and let it chill for a few hours. It also makes a great breakfast porridge, eaten like oatmeal-perhaps topped with a dollop of fresh yogurt and agave nectar or honey. Its a very heart meal for breakfast. You can also make a great "milk" from quinoa by grinding it in a blender with a little honey or agave, some spring water, then strain it through a coffee filter-great for cereal or anywhere else you would use regular milk. My daughter loves it!

    *Quinoa with Butternut Squash and Red Bell Pepper *

    (I really like this one)

    Ingredients:

    1 tablespoon olive oil

    1 cup coarsely chopped peeled butternut squash

    2/3 cup chopped red bell pepper

    1/3 cup finely chopped onion

    1 1/2 teaspoon finely chopped seeded jalapeno pepper

    1 clove garlic, minced

    1 1/3 cup fat-free, less-sodium vegetable broth

    1 cup uncooked quinoa

    1/2 teaspoon kosher salt

    1 1/2 tablespoon thinly sliced green onions

    Directions:

    Heat oil in a large saucepan over medium-high heat. Add squash and next 4 ingredients (squash through garlic); saute 4 minutes. Stir in broth, quinoa, and salt; bring to a boil.

    Cover, reduce heat, and simmer 20 minutes or until the liquid is absorbed.

    Sprinkle the quinoa mixture with thinly sliced green onions.

    I just stick it in pasta sauce and soups.
