What should I do with my fennel?

I just got a bulb of fennel but have never done anything with it before. So what should I do with it?

    You can eat it raw: shaved fennel, with rocket or endive or radicchio lettuce, and some sliced pear or orange filets make a nice salad, with an olive oil & balsamic vinegar dressing.

    I like it baked:

    Slice the fennel bulb into 1/2 inch slices.

    Place them into an oiled baking dish in one layer.

    Mix some coarse breadcrumbs (preferrably using stale Italian bread), salt, black pepper, and a couple of handfuls of grated cheese (an Italian cheese like Asiago works best, but also Havarti or Parmesan). Sprinkle this over the fennel slices.

    Then mix a cup of chicken stock, half a cup of white wine and pour it over the fennel and crumb mixture.

    Bake in a moderate oven for about 40 min until fennel is soft and the crumbs golden. If the crust threatens to go too brown, cover with foil.

    I've only ever made ond dish with fennel but it was amazing. It was a butter and flour based lemon and garlic sauce with fennel. I cut the fennel just like you would celery. They I took fish fillets in a saute pan and braised the fish fillets in the sauce and served over safron rice or cous cous. Absolutely delicious.
