I realize this is not what you have in mind ... But a good thing to do with leftover rice (after 2-3 days when you're tired of re-heating and serving it) is to mix it in with your dog's food. It's an inexpensive healthy way to extend your pet's food. Sometimes I buy the great-big bags of the cheapest rice there is and periodically cook it up in my rice-cooker for the dogs. Then I store it in the refrigerator for several days and put some of it in with the dogs' food at feeding time.

    Thai style rice soup

    2 cups water.

Knorr pork cube or you can use a Knorr shitake mushroom cube.

1/4 cup pork, ground or small pieces

Several chopped spring onions/ green onions depending where you live

    1/2 cup cooked rice

    1 Tablespoon fish sauce

    Pinch of salt

    pepper to taste

Boil the water, add the meat first and then all the other ingredients. Simmer for 5 to 10 minutes and serve.

You can increase/reduce any of the ingredients to your own taste. You can also change the flavour and meat to suit yourself.

    FRIED OR LEFTOVER RICE

    2 c. cooked rice

    About 5 slices bacon

    1 med. onion

Cut bacon and onion in small pieces, saute in skillet and pour off most of the grease. Add rice, cover and cook about 5 or 6 minutes. If desired, add 2 tablespoons soy sauce; better if rice is over cooked.

Source(s): Tried it. It is wonderful.

Take the cooked rice and add a couple of eggs, some grated parmesan cheese (or the one you like best), some chopped parsley and some pepper and salt if needed.

Mix very well, the heat some vegetable oil in a frying pan. Press the rice in the pan, cook it as you could do for omelet, and serve it in slices.

Greek-Inspired Leftover Brown Rice Casserole with Red Pepper, Onions, and Feta 4 cups cooked leftover brown rice 1 T olive oil 1 large onion, chopped fairly small 1 large red bell pepper, diced into 1/2 inch pieces 2 tsp. Greek Seasoning (I use Penzeys Greek seasoning, which is a mixture of salt, Turkish oregano, garlic, lemon peel, black pepper, and marjoram.) 6 oz. crumbled feta cheese (about 1 cup, don't buy pre-crumbled feta, buy a block and crumble it) 1/4 cup chicken stock, preferably homemade chicken stock Preheat oven to 375F/190C. Chop onion and red pepper. Heat 1 T olive oil in heavy frying pan, add onion and saute over medium-high heat about 2 minutes. Add red pepper and Greek seasoning and saute 2-3 minutes more. Add rice and saute about 1 minute, stirring with a turner so the veggies are evenly distributed in the rice. Turn off heat and gently stir in crumbled feta cheese and pour over chicken stock. Spray a glass or ceramic casserole dish with olive oil or non-stick spray, then pour in rice mixture and spread around in an even layer. Cover casserole and bake about 25 minutes. Remove lid and bake about 5-10 minutes more, until cheese looks slightly melted. Serve hot.

its very easy to make a good ricey dish from the leftover rice but mind it,the left over rice should not be kept for more than 8 to ten hours.

you can make avery good veg pullao out of it or even chicken biryani out of it. just saute some onions in some mustard oil and put some carrots, beans and capsicum, cabbage and saute for a minute, add the rice and stir for some time add salt and pepper to taste.

for chichen biryani, put a layer of chicken curry and put a layer of rice over it,the gravy must be thick, again put a layer of chicken curry, microwave for 2 min, serve hot garnished with cut tomatoes and coriander leaves.

Do a search for unstuffed pepper soup or stuffed pepper soup. It uses leftover rice and it is so good. Can make spanish rice with it also. Could add it to other soups or stuffing if you are making any. Also rice pudding calls for cooked rice. There is tons of things that you can do with it. Make a casserole with left over chicken, use leftover rice, leftover veggies and a can of your favorite cream soup. Use your imagination.
