What's on tomorrow's menu?

I feel like cooking some comfort food..I cook all the time so Im drawing a blank..I was thinking meatloaf..but who knows..can you send me some suggestions of what kind of comfort food you would like..

    Meatloaf is my favorite with mashed potatoes. That would comfort me. When are you serving?

    Quick and Easy Creamy Bacon-Mushoom Pasta Skillet

    Ingredients

    16 ounces penne pasta, cooked

    12-15 slices thick uncooked bacon, finely chopped

    1 (8 ounce) package sliced fresh mushrooms

    1-2 tablespoon finely chopped fresh garlic

    1/2 teaspoon crushed red pepper flakes (or adjust to suit heat level)

    2 cups heavy 35% cream, unwhipped

    3/4-1 cup grated parmesan cheese (or to taste)

    3 green onions, chopped (can use more)

    salt & freshly ground black pepper (to taste)

    Directions

    In a large skillet cook the chopped bacon until crisp; remove to a bowl.

    Drain all but 2 tablespoon bacon fat from the skillet.

    Add in sliced mushrooms, garlic and chili flakes; cook for about 3 minutes or until the mushrooms are tender.

    Reduce heat to low then stir in the whipping cream and parmesan cheese.

    Mix in the cooked pasta, bacon and green onions; stir to heat through.

    Season with salt and pepper to taste.

    Fettuccini Carbonara !! VERY easy to make and VERY VERY delicious!

    That with some garlic toast and Caesar salad, can't get any better! oh and some nice wine

    here is my recipe for Fettuccini Carbonara just in case you need!

    5 teaspoons olive oil

    4 shallots, diced

    1 large onion, cut into thin strips

    1 pound bacon, cut into strips

    1 clove garlic, chopped

    1 (16 ounce) package fettuccini pasta

    3 egg yolks

    1 cup heavy cream

    3/4 cup shredded Parmesan cheese

    salt and pepper to taste

    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.

    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper. serves 6

    Chili Con Carne w/ cornbread! I offer cheese, slightly crushed Frito's, and sour cream to top the chili, or also have rice that the chili can be poured over. For the cornbread, I always serve with creamed honey cinnamon butter. A small garden salad before is always nice, as well as berry/peach fruit smoothies.

    I'd cook a big pot of beef casserole, with shallots, onions, mushrooms, red wine and fresh thyme from my garden.

    I'd serve it with creamy mash potatoes with butter and chopped chives and a huge bowl of green salad to accompany it. Loads of crusty bread to mop up the juices, and a bottle of Shiraz or Cabernet. Candles on, and the fire, and some lovely mellow music, possibly Jan Garbarek on saxophone.

    Then sleeeeeep.

    SHEPHERDS PIE (POOR MANS PIE)

    1 lb. ground beef

    1 can peas

    1 can sweet corn

    1 medium onion, diced

    1/3 c. sugar

    8 medium potatoes

    2 c. shredded sharp cheddar cheese

    Boil potatoes, mash and season to taste with milk and butter.

    Brown ground beef and onion with salt and pepper. When cooked, add peas, corn, sugar. Let simmer until heated through.

    In 13x9 pan place meat and vegetable mixture in bottom of pan. Cover with mashed potatoes and sprinkle cheese on top.

    Place in oven on BROIL until cheese is bubbly or light brown.

    Eggplant/chicken/veal Parmesan or chicken wings and sweat potato fries. If you feel like going Asian, make a sushi dish with salmon and jasmine rice wrapped in seaweed. Or go with the chicken and pineapple dish over rice. Cook and dice chicken, when its finished add pineapples and soy sauce over a bed of rice. It is good to be diverse in your dishes.

    Chicken and dumplings and baked mac n cheese are my favorites. Meatloaf and real mashed potatoes would be really good.
