dude call the 800 number at samash online they are working guitarists and really know their stuff and the prices are great but heres a wierd idea mix a humbuker in with the clark singles or try it in the front position and use the tone switch to get more depth of tone

I have a Fender HSS special model mohagany strat, and it has two tex mex single coils, and I don't know how much they are like the texas specials, but I wouldn't recommend them. They are noisy, but I have S1 switching built in to the volume knob, so I can reduce a lot of it. I would go with a Fender noisless pickup if I were you. Thats what they put on the high end fenders.

Texas Specials will give you the sound you said you wanted. Why do you not want them? You could also try EMG-SA active singles. They're extremely hot and noise cancelling. But they're not a fat, Texas blues pick-up.
