I want to sew some potholders? Is there anything specific it needs to block out the heat? ?
Can it just use multiple layers of fabric?

You might burn your hand picking up a hot pan with just multiple layers of fabric. Here's a great site that give more information on what to use/what not to use and why:

Best potholder padding is wool -- it's a very good insulator, doesn't catch on fire easily, and self-extinguishes when the source of the flame is removed. If you machine wash and dry the wool several times before using it as batting, it will stay in good condition, and the potholder will be washable.
My favorite fabric for potholders is a nice, thick wool sweater that's no longer in wearable condition. Machine wash and dry several times, cut it up, and use. One of the local thrift stores was willing to save holey wool sweaters for me until I gave them some potholders I'd made with their sweaters. Now they make and sell their own from discarded sweaters. Oh well.

Hi, Pepsi.
There is a product made specifically for this - Insul-Bright Insulated Lining.
You can find it with the interfacing.
Be sure the clerk gives you the plastic sheet the lining comes wrapped in as this contains the instructions for using Insul-Bright.
Insul-Bright is sold by the yard or fractions of a yard - what ever you need.

Yes, the fabric needs to be insulated and fireproof. (it would say it on the bolt)
