Quinoa Rice Recipe off of Simple Life on TLC?

I saw an episode of Simple Life on TLC and they had a quinoa rice recipe that looked really good where they added in vegetables and stuff. Does anyone know that recipe or a really good quinoa rice recipe?

    I had no idea what quinoa was, but my best friend told me about this recipe a few months ago. I live in a small town in Kansas and had NO idea where I could even buy quinoa, so she shipped me some from LA for my birthday and I made this recipe for my birthday dinner. It was FABULOUS! Hope you like it too!

    Quinoa and Black Beans

    1 teaspoon vegetable oil

    1 onion, chopped

    3 cloves garlic, peeled and chopped

    3/4 cup uncooked quinoa

    1 1/2 cups vegetable broth

    1 teaspoon ground cumin

    1/4 teaspoon cayenne pepper

    salt and pepper to taste

    1 cup frozen corn kernels

    1 can black beans, rinsed and drained

    1/2 cup chopped fresh cilantro

    1 tomato, diced

    diced avacado

    Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

    Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

    Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans, tomato, and cilantro. Garnish with diced avacado, if desired.

    This is from a website called freedomyou.com, it has all of the Quinoa Rice information, health benefits and several recipes that can be used with this most nutritional and fast cooking rice.I'm absolutely positive that you could make this recipe all your own by adding in any your diced favorite vegetables when you add in the peppers and it would taste even better! Although, this is not from the show you watched, it's a base recipe that you can tweak and add your own love to! Good Luck and Happy cooking!

    Quinoa Vegetable Rice

    4 med. yellow onions,chopped

    1 large red pepper, chopped

    3 garlic cloves, minced

    ½ tsp of sea salt

    2 tablespoons olive oil

    2 cups of rinsed Quinoa

    4 cups of water

    2 vegetarian soup stock cubes

    Add finely chopped onions, minced garlic, and salt to olive oil in wok and sauté until onions are slightly brown. Then add chopped red pepper and continue to sauté until onions are caramelized. Add water, stock cubes and rinsed quinoa and bring to a simmer. Stir once after five minutes then simmer for 35 minutes or until water has been cooked in.
