can I make banana bread without eggs?
i ran out of eggs and didnt realize it...

Thank Christine Cushing for this recipe, you couldv'e ask me I have plenty of Eggs, but can you do it without Eggs Yes You Can, for now stay at home bake the Banana Bread and later on put Eggs on top of your Grocery Shopping List.

Ingredients
-2 or 3 very ripe bananas, mashed (about 1 cup/250 ml)
-1/4 cup honey (60 ml)
-1 1/2 tsp vanilla (7 ml)
-1/4 cup granulated sugar (60 ml)
-1 cup plain yogurt, full fat (250 ml)
-2 tbsp vegetable oil (30 ml)
-1 1/2 cup flour (375 ml)
-2 tsp baking soda (10 ml)
-1/2 tsp salt (2 ml)
Preparation
1. Preheat oven to 350 degrees F.
2. Lightly grease a 4-inch X 8-inch loaf pan. Line the bottom with parchment paper.
3. In a large bowl, mash bananas. Add the honey, vanilla, sugar, yogurt and oil. Mix with a spoon or spatula to combine.
4. Sift flour, baking soda, salt onto parchment paper or another bowl. Gently fold the dry ingredients into the banana mixture until just combined.
5. Pour batter into prepared loaf pan. Bake 40 to 50 minutes, until golden and tester comes out clean. Let cool in the pan for 30 minutes. Flip onto a wire rack and cool completely. Cut into 8 to 10 slices. Serve.

A lot of banana bread recipes that are made from scratch don't even call for eggs. One egg usually measures about 1/4 cup, so you could put about 1/4 cup applesauce in the recipe instead, or just leave them out. The bread will still come out fine :)

Yes, you can. Use applesauce substitute any of these suggestions:
I've had to sub for eggs many times. LOL
"For baking
1 egg = 2 tablespoons liquid + 2 tablespoons flour + ½ tablespoon shortening + ½ teaspoon baking powder (Recipe from Substituting Ingredients by Becky Sue Epstein and Hilary Dole Klein. See my sources. Add one or two drops of yellow food coloring if desired.)
OR egg substitute (Substitute 1/4 cup egg substitute for each egg. Using egg substitute in place of eggs tends to make baked goods rubbery, because egg substitute has no fat. To improve the product's texture, add one teaspoon of canola oil for each egg replaced. Egg substitute can't be whipped and is much more expensive than regular eggs. It doesn't work well in cheesecakes. For more information, visit the Illinois Cooperative Extension Service's Egg Substitutes page; for a recipe, visit its Homemade Egg Substitute page)
