    Ingredients:

1 Pound Can jellied cranberry sauce

10 Ounce Jar Smucker's Simply Fruit Orange Marmalade

    1/4 Teaspoon Ground ginger

2 Cup Fresh cranberries; each sliced into 2 or 3 pcs

    1/3 cup Walnuts, chopped fine

In 2−quart saucepan, over medium−to−low heat, use rubber bowl scraper to stir together jellied sauce, marmalade and ginger until melted, about 6−8 minutes. Add the sliced cranberries, keeping sauce on low. Stir often.

Continue cooking and stirring often until cranberries are no longer white

and taste tender to the bite (not soft, but not too crisp). Stir in walnuts.

When cooled to lukewarm, refrigerate, covered and use with a week to 10

days. Should freeze well to be used within 4 months

    APPLE CRANBERRY RELISH

    8 red firm apples

    juice of 1 lemon

    1 can whole cranberry sauce

    1/2 cup chopped candied ginger

1 tablespoon grated fresh ginger root

    1/2 c. dried cranberries

    3/4 cup coarsely chopped walnuts

    1/2 c. orange juice

Grate the unpeeled but cored apples in fine julienne style, and toss with the lemon juice. Mash up the cranberry sauce slightly and combine that and the rest of the ingredients with the grated apples.

Refrigerate and allow the flavors to blend for at least 1 hour.

The best cranberry relish I've had:

1 bag (1 lb) frozen cranberries

1 sweet orange, zested and juiced

1 cup chopped roasted pecan pieces

1/2 cup fine grain sugar (powdered sugar can be substituted)

This recipe is by taste so amounts may vary

Chop cranberries and pecans in a food processor. You don't want mush so use the pulse just until it looks like pickle relish

Add the sugar and half of the zest and juice from the orange

Stir together and taste. It may need more sugar (I've used over a cup). Keep tasting and adding either zest, juice or sugar depending upon how you like it.

This is a super easy cranberry relish recipe, so easy I know it by heart.

12 oz cranberries sorted and rinsed

    1 seedless orange peeled

    1 cup white sugar

Blend the orange and cranberries in a food processor. Move to bowl, add one cup of sugar, mix, and voila!

    Cranberry Relish

    4 large oranges

    2 pounds cranberries

4 apples, cored and diced with peel

    4 cups white sugar

Take the yellow peel from oranges; trim off and discard white part. Put orange pulp and yellow peel, cranberries, and apples through food chopper. Add sugar and mix well.

Cover and refrigerate. Or pour into glass jars, leaving 1/2 inch head space. Seal and freeze.
