    2. Cooking Directions

In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.

Preheat the grill for high heat.

Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.

Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

    Club Sandwich

    Cook three strips of bacon.

    Toast three slices of bread.

Spread mayo on toasted bread, top 1st slice with lettuce, tomato, bacon, top with next slice of bread, add ham, turkey, cheese, top with last slice of bread. Cut into sandwiche into 4 on the diagonal.

If you have a electric juice, just put whatever fresh fruit you have on hand into the juicer, serve over ice. If you don't have an electric one, then peel oranges, apples, etc, and place in food processor or blender. Add some ice, plain yogurt or a little milk and blend for a nice smoothie.

Melt butterscotch bits in the top of a double boiler and mix in the dry Chinese noodles. Sppn out on a cookie sheet buttered or sprayed with an oil or covered with waxed paper. Refrigerate ntil firm and eat. Very good.

You can also melt chocolate bits and do the same thing but use peanuts in place of the Chinese noodles. I don't have a double boiler so I put about 3 inches of water in a pan and put a smaller pan on top of that pan and put the ingredients that I am melting in the top pan. It works the same way.
