    This is my own recipe. If you ever make this you will NEVER eat any other kind of dressing. I promise!

    Chicken and Cornbread Dressing

    (GREAT FOR HOLIDAYS)

    1 large hen or chicken

    3 cups crumbled bread (day old)

    6 cups crumbled cornbread (not sweet)

    1 stick real butter

    2 large onions, chopped

    1/2 cup green onion tops, chopped

    1/2 cup chopped bell pepper

    1 cup celery, chopped

    7 eggs (raw)

    2 cups milk (I use evap. milk)

    5 cans cream of chicken soup

    salt and pepper (I don't salt, I use chicken bullion cubes adds more flavor to broth.)

    Preheat oven 375 degrees. Cook chicken until tender in seasoned water, then de-bone. In saucepan, combine 1 1/2 cups of the broth made from boiling chicken, butter, onions, celery and green bell pepper and bring to a boil. Reduce heat and simmer until vegetables are tender. In large mixing bowl mix chicken, breads, broth/vegetable mixture: add eggs, milk and salt and pepper. Mix well and bake in a large, greased baking dish. Bake 375 degrees for 45 minutes or until knife comes out of center clean. Serves 10 - 12. NOTE: I always let my broth set and cool so I can skim the fat off the top. The chicken fat has a taste I don't care for. I like the butter taste better.

    Everyone looks forward to the stuffing, and when the bird is stuffed, and there's leftover stuffing, instead of putting it in a casserole dish, I use an ice cream scoop to fill muffin tins to make stuffin muffins. They are a big hit!

    STUFFED EGGS

    1 doz. eggs, hard boiled

    1 tsp. mustard

    12 stuffed olives (optional)

    Salt & pepper to taste

    1 tbsp. or more of pickle relish

    Salad dressing or mayonnaise to mix

    Paprika (optional)

    Boil eggs, peel and split lengthwise. Remove yolks. Put in bowl. Set split egg whites on side. Mash yolks and add relish, mustard, salt and pepper and enough salad dressing or mayonnaise to mix well. Fill egg halves. Use 1/2 or whole stuffed olive in center of egg half after filled. If desired, sprinkle paprika over eggs.
