what do I think of it? In what sense?
Ive owned personal protection dogs and Sch titled dogs all my adult life. Bite work is part of what they do.I think its great for the right dog to be trained in a line of work they were bred for. My dobes are working dogs. All of them have been preped and trained specifically for a job. Bite work is essential for their job.
If professionally bred trained and handled a dog can benefit immeasurably from working in bite related work.
Would I ever suggest a person teach their dog to bite? No never. Teaching a dog to bite is easy. Teaching them percisely how and when is harder. Teaching control and release is harder still.

It's a good idea in theory.
The reality is, "bitework" isn't as controlled as it should be. As in, the dog get so excited to bite, it's sometimes uncontrollable. BAD NEWS!
That, or the dog gets habituated to only biting the practice sleeve and doesn't "get it" to bite a perpetrator. LOL!
I think it's great if you have a controllable, well trained dog with an experienced handler.

Best left to the professionals. Amazing that dogs can be trained to do such things, but it's not something the average person should tamper around with.

It should be reserved for the RIGHT dog with the RIGHT person who is willing to put in the time, money, and effort to do it right.
Most people, and most dogs, do not have what it takes.

i had fun when i did some schutzhund (with my golden LMAO)
actually my friend was training her shepherds and my golden got all excited so they let us try was fun.
