CHEFS -- How much salt should I add to soup water?

I'm making soup, and have probably a 2 gallon kettle. I've added the chicken and water and onion. I never know exactly how much salt to add...and don't want it to come too salty. I've added 1 and a half tablespoons...have i already added too much?

thanks so much!!

Update:

technically i can't taste it because there is raw chicken in it....:) i suppose when it's done i can.

put your finger into the soup towards the end of cooking. dont add salt now, because the soup is going to reduce some. the soup should be flavorful but not overly salty.

I would not add any salt until you have added the last ingredients. Salt added to early will be absorbed by the stock ingredients. Follow a recipe and you should be alright. At the last stage after everything is in the pot then taste and adjust. Also, if you're cooking for others then you might want to keep it on the less salty side as others can add as much as they like.

According to Betty Crocker's cookbook, you need 1/2 teaspoon of salt for each pound of meat.

You add to your taste. Taste it and add the salt to your liking. Then it will be perfect!
