how to make fluffy spritz cookies?
my spritz keep coming out tough, even with my gramma's recipe that were always fluffy.

Try melting the butter first, the sugar dissolves easier in it and it's a smoother dough. I do that for choc chip cookies and it works well, and makes the dough a lot easier to work with. NOTE: I think the sugar amount in the 2nd recipe is way too much. I wouldn't use a lb of sugar. It probably called for a cup ???

SPRITZ COOKIES (Oldie)
1 lb. butter
1 lb. sugar
4 c. flour
1 tbsp. almond or vanilla flavoring
1 egg
Mix ingredients. Put through cookie press. Bake at 375 degrees for 7-10 minutes. I use the star design for O's and S's. (This was the original Swedish Spritz design.)
