9" pie shell
The white of an egg - beaten
1/2 lb sliced bacon - cooked and crumbled
1 T dried chives
1/2 slice Breakfast ham - cut into small cubes
1 cup milk
1 cup cream
3 whole eggs
1/4 tsp salt
1/8 tsp white pepper
1/2 to 1 cup shredded Swiss cheese
Brush the crust with beaten egg white. Prick the crust well. Add into the crust the bacon, chives and ham. Sprinkle on the Swiss cheese. Mix together the milk, cream, whole eggs, salt and white pepper. Pour over the ingredients. Sprinkle with a little nutmeg.
Bake 35 to 40 minutes at 375º or until a knife comes out clean in the center.

Quick Quiche
"When you don't have the time to make a pastry crust, try this quick lunch idea. You may add any other goodies you like, such as ham, chicken, crab, shrimp or broccoli."
8 slices bacon
4 ounces shredded Swiss cheese
2 tablespoons butter, melted
4 eggs, beaten
1/4 cup finely chopped onion
1 teaspoon salt
1/2 cup all-purpose flour
1 1/2 cups milk
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.
Bake in preheated oven for 35 minutes, until set. Serve hot or cold. Serves 6.

Super Fast Spinach Quiche (serves 6)
Ingredients
½ cup olive oil
¾ cup self-raising flour
5 eggs, beaten
1 carrot, grated
2 sticks celery, sliced finely
2 spring onions (shallots), sliced
1 cup grated reduced-fat cheese
2 cups chopped spinach (packed)
Freshly ground black pepper.
Method
Mix all ingredients together and pour into a greased quiche dish and bake at 180 degrees for 40 minutes or until set.
Serve warm or cold. SERVES 6.

Ingredients (serves 4)
* 1 tablespoon olive oil
* 1 brown onion, finely chopped
* 2 chorizo sausages, roughly chopped
* 1 red capsicum, deseeded, finely diced
* 3 eggs, at room temperature
* 1 1/2 cups milk
* 1/2 cup self-raising flour
* 1 cup grated tasty cheese
Method
1. Preheat oven to 200°C. Grease a 4cm deep, 24cm (base) ovenproof fluted ceramic quiche dish.
2. Heat oil in a non-stick frying pan over medium heat. Add onion, sausage and capsicum. Cook, stirring often, for 4 to 5 minutes or until tender. Remove from heat. Set aside for 5 minutes to cool.
3. Whisk eggs, milk and flour in a bowl until well combined. Stir in sausage mixture and cheese. Season with salt and pepper.
4. Pour mixture into quiche dish. Bake for 45 to 50 minutes or until set in the centre. Allow to stand for 10 minutes. Serve.
