if i paid to have my text messaging covered, is it taken out of my regular minutes? does the coverage include messages received and sent?

No, it wouldn't be taken out of your normal minutes. Text messaging and minutes are two separate features. And yes, both sent and received messages count towards your total messages. The only around this is to delete the message before you read it.
