What happens when you substitute Whole Wheat flour for All purpose?
I'm getting in the groove of baking (oh, boy...it sure will be interesting).
I want to make everything healthy, and I was wondering...what would happen if I substitute whole wheat flour instead of all purpose?
Also...what is a good butter substitute...I heard Applesauce does the trick?

If you just substitute whole wheat flour, it will make most recipes very dense. A good healthy substitute that you can use cup for cup is spelt flour. I have not had good results using applesauce in place of butter but I do not know of something else

You can use about 1/4 to 1/2 whole wheat flour in place of AP flour. You need the AP flour for the gluten content.
You can substitute applesauce but figure about 1/3 to 1/2 of the oil can be replaced by applesauce. Too much applesauce makes the baked goods gummy.

Applesauce does work. 2Tbsp. per 1Tbsp. butter.
