I like the original more. In the original photo the moment of the bite into the apple adds drama and movement. The partial head shot focuses the shot on the apple/mouth, with the partial eye adding a mysterious element. The soft lips over the hard shiny apple is also a strong contrast.

In the altered photo, the rainbow colored apple adds more visual interest, but is not necessary for the composition, which is strong by itself.
