One night is more than enough. go to the cloud forest, go eat at the tree house, go to the zip lines called extreme, and visit Don Juan coffe park... Trust me you can do this in two days one night.

The quetzal bird, the cloud forest, and on your way you could take a peak at an active volcano, which erupts every 30 to 40 minutes. And to ans. question #2- NO! you can't stay just one night : P
