Super easy! Hope this helped!
CHOCOLATE CANDY CANE BARS
1/4 cup melted butter or margarine
2 cups fine crushed creme-filled chocolate sandwich cookies (approximately 24 cookies--I prefer to use Oreos)
1 12-ounce package semi-sweet chocolate chips (or 2 cups)
1 14-ounce can sweetened condensed milk (do not use evaporated milk)
1 teaspoon vanilla extract
1 cup crushed candy canes (finely or coarsely crushed, your choice)
1 13x9 baking pan
Non-stick spray or extra butter to grease baking pan
Medium saucepan
Mixing bowl (optional)
Small saucepan or glass/microwave-safe bowl
Grease 13x9 baking pan. Melt butter/margarine in small saucepan over low heat, else in a microwave (in a small glass or microwave-safe bowl).
Do not bring butter/margarine to a boil. Combine cookie crumbs and melted butter/margarine (either in a mixing bowl or directly in the baking pan).
Press mixture firmly to the bottom of the 13x9 baking pan. I use a piece of waxed paper to press the mixture into the bottom of the pan.
That way, the mixture won't stick to the waxed paper, keeping your hands clean.
In a medium saucepan, over medium heat, melt half of the chocolate chips (1 cup), sweetened condensed milk, and vanilla extract.
Remove from heat and turn off stove-top/range. Pour evenly over the cookie crumb crust. hTop with the remaining chocolate chips and crushed candy canes.
Bake for 20 minutes at 350 degrees, or until set. Cool and cut into bars (yields 24-36 bars). Store tightly covered at room temperature.

Buche de Noel is always impressive, and not very hard. It's a jellyroll filled with Bavarian creme; then frosted in chocolate frosting. Run fork tines over the top of the "log" to look like bark in the frosting; make some meringue mushrooms and dust them with cocoa powder. Put some artificial greenery around it ....Or, do a Marble bundt or layer cake; but do the white part tinted pink, with crushed candy canes in it; drip chocolate frosting over the top and sprinkle more crushed canes on top ..... Or, do a cheesecake swirled with cranberries

This is the easiest thing to make and a real crowd pleaser. I've never made it without ohhhhs and ahhhhs. Can be doubled, tripled, whatever:
Apple Walnut Torte with Caramel Rum Sauce
Serves 12
TORTE
2 cup unbleached all-purpose flour
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
2 cup sugar
1 stick butter, room temp.
2 egg, beaten to blend
3 cups chopped, peeled apples
1 cup chopped walnuts
For Torte: Pre-heat oven to 350F. Butter a large cake pan at least 2” high. Sift first 4 ingredients
into a large bowl. Beat butter and sugar until well blended. Add egg one at a time and beat well. Stir
in dry ingredients, then apples and nuts.
Transfer batter to prepared pan. Bake until tester comes out clean, about 45 minutes. Transfer to rack and cool.
(Can be made 1 day ahead. Cover cooled cake and let stand at room temp.)
SAUCE
1 cup whipping cream
2 stick butter
1 cup packed dark brown sugar
6 Tbls. dark rum
Vanilla Ice Cream
For Sauce: Combine first 4 ingredients in a heavy medium saucepan over medium heat. Stir until butter melts and sugar dissolves. Increase heat and boil until slightly thickened, whisking occasionally, about 3 minutes. Mix in Rum and cool slightly.
Serve over torte and ice cream.

What about mini pavlovas ... meringue baskets filled with a dollop of whipped cream and decorated with cut kiwi fruit and strawberries. Easy to make ... no baking 'cause you can buy the baskets ready made from the supermarket ... they look Christmassy with the red and green fruit ... and they taste delicious!

my mom makes these really good mini cheesecakes.. you put a vanilla wafer in a cupcake cup and cheese cake on top (dont have the recipe for that though, but i think its on the philadelphia cream cheese package?) and you spoon cherrys on top (the cheesecake kind)
