There's the superstition where you give the giver of a knife gift a coin to ward off bad luck (cutting the friendship). Does this apply to cheese knives as well?

sure. that's stated as stealing. (presuming which you're taking a newspaper while doing this. in case you only stick Chuck E Cheese money in a newspaper gadget and stroll away, then it would not be.)
