A recipe calls for rice flour...what is a good substitute?
I found a recipe for hazelnut shortbread which, along with 2 cups of plain flour, requires 2 tablespoons of rice flour. I don't have any in the pantry. What is the purpose of rice flour? Do I need to substitute it with something else or can I just cut it out of the recipe?

Hazelnut flour has no gluten and very low starch. Rice flour is adding starch. Other alternatives to add starch are: Tapioca, Arrowroot and corn flour.
Starches are added just for texture.
If you want to add gluten and making it gluten free, you can add Xanthan Gum as a gluten replacement. You would use 1/2 teaspoon per cup of total Gluten-free flour.

rice is a starch there-for you can substitute it with corn flour or potato starch.
and if you don't have that stuff...then...your gonna have to buy some gluten free and wheat free flour.
