do you have side dish ideas?
I'm making chicken for dinner tonight and I want something other than salad or canned corn/green beans for a side dish. Do you have any ideas and if so, what are the recipes? Thanks!

I usually use this as a side dish for chicken with some asparagus. It's cheese and potato gratin. Take a look at the recipe -

Green Bean casserole!
* 1 can (10 3/4 ounces) condensed cream of mushroom soup
* 4 cups cooked green beans
* 1/2 cup milk
* 1 1/3 cups French fried onions
Preparation:
Mix soup and milk in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.
OR
Just some classic mashed potatoes
Get some red potatoes, wash and dice while leaving the skins on. Boil some water...make the water as salty as sea water. Throw in your potatoes and boil until tender. Use a masher to mash, add some milk, butter, salt, and pepper.

Baked mac and cheese! It is delicious!
1/2 lb elbow macaroni
1 lb of shredded sharp or mild cheddar cheese
1 tablespoon of butter
1 cup of milk
2 eggs
1 teaspoon of salt
1/4 teaspoon of pepper
Preheat your oven to 350 degrees. Boil the macaroni for 10 minutes. Toss the macaroni in a bowl with the butter, so that the butter is melted and covers the macaroni. In a small bowl, mix half a pound of the cheese, the milk, salt, pepper, and eggs. Then, mix it with the macaroni and pour into a baking dish. Top it with the rest of the cheese. Bake it for about 30-35 minutes at 350 degrees.

Well i sometimes make like a spicy mashed potato thing. Just get fries and put them in the microwave for a little just so they are soft. then mash them really good into small chunks. Then put them in a frying pan(use a little butter so it does not stick to the pan)and cook them for a while. Then add Some hot sauce, Ketchup, Salt, pepper, Oregano, and whatever else you want just to get flavor. Mix and stir for a while till see crisp on the mashed fries and let cool for 1min. take out and put in plate for side dish. Note: put more fries than you think because it seems like there is less when you take out. Enjoy your meal. By the way i made recipe myself.:)

try a corn casserole.
1 can whole kernel corn
1 can creamed corn
1 box jiffy corn bread mix
1 egg
mix together and place in a casserole dish, bake at 350F until set in the middle and golden brown on top.
for something with a kick you can add a can of diced chiles.

Sauteed peppers & onion: *easy*
In saucepan, slice onion into manageable pieces & place on medium w/a little water. Saute until wilted; mixing often. Slice red/orange/green peppers (what ever colours you like) and sautee in saucepan adding about a half a tablespoon of butter. Mix often. Allow peppers to brown a little (don't burn them)! Add s/p if needed.

Pan seared brussels sprouts with bacon.
Take 3-4 pieces of bacon and chop it up and cook till crispy. Remove from the pan and save.
Next clean your sprouts and place them in boiling water until tender. Remove from the water and place in a bowl of cold water to stop the cooking process and make them easier to handle. You dont' want them cold just workable.
Slice each sprout in half and place cut side down onto paper towels to help remove moisture. Once they are all done, heat up the bacon fat over med-high heat. Place the sprouts cut down in the bacon fat and let the cook till brown and heated thru.
Remove to serving bowl and garnish with the bacon bits.

Roasted red skins (tossed on olive oil, salt/pepper, herbs, baked in oven on 350 for 40 mins)
Grilled asparugus with balsamic glaze
Brussel sprouts with garlic and bacon and feta cheese
Cheesey broccoli
Rice pilaf
Mushroom rissoto
Butternut squash rissoto
Mashed sweet potatoes (sweet potatoes peeled, diced, boiled for 20 mins then added -- 2 tsp. brown sugar, some salt, some butter and blended with hand blender)

before you put the chicken in the pan, layer sliced potatoes, onions, carrots and sweet potatoes on the bottom and spice them lightly with garlic, salt and pepper. then when you put the chicken on top pour on either wine, OJ or lemon juice (depending on your preference). and when you serve it you'll have really juicy starches and veggies (which you separate b4 u serve it) to go along with your chicken.

Roast potatoes and parsnips around your chicken.
Serve with steamed or simmered caulifower and a pan gravy with softened onions.
