Hi,
I was reading a couple of great books, and they offer great tips to avoid being a diabetic, and how to lower your medications if you are one. This is not something to take lightly.
Dr. Barnard's Program for Reversing Diabetes.
The PH Miracle for Diabetes. By Dr. Young.
Dr. Young writes that insulin becomes more effective in a less acidic person, and recommends a more alkaline diet.
Dr. Barnard recommends adding more vegetables, beans, and even rice to your diet.
Try oatmeal with 1/4 teaspoon of cinnamon on top. The cinnamon helps slow the sugar absorption, and makes the sugars last more of the day, so you can resist eating snacks before lunchtime.
Yes I said YOU. Do you think that because mom is the one with out of whack blood sugars that you can give her advice without using it yourself? How far are you from getting diabetes? I can not say for sure.
Both of you can read this book, and then make diet choices that will help both of you. One person who followed Dr. Young's advice was in intensive care for a week, and had blood sugar levels over 1,000 (page 13 of the book) and when he found his daughter had diabetes, he started to follow a more alkaline diet, and both where able to reduce their medications, and gain better control of their blood sugar levels.
Good Luck,
Happy New Year !

Wow redbird, you should put the brakes on there.
To the asker, here is a link to a Diabetic site that has all sorts of resources regarding nutrition for Diabetics. Perhaps your Mom could take a look, and from seeing what types of food are healthy/good for Diabetics, it can help in her meal making decisions.
Cheers and best of health

As much healthy food as possible.
Fruit, veg, wholegrain [bread, pasta, rice] nuts, seeds, fish, chicken, low fat milk, water, 'pure' juiced fruits/vegetables
This will ease the symptoms dramatically if she ever does develop diabetes and will prevent her from getting it if she eats, sleeps and exercises right, as well as limiting stress and junk food.

I am not sure if you want the amount of calories so I will just put the foods.

lean ground turkey-Look for packages containing all white meat.
tofu-soft tofu is great for baking or smoothies use firm for main dishes for more flavor look for packages tofu that has been marinated.

edit: Lower bad cholesterol raise the good and decrease blood pressure. Half a teaspoon of these will help.
Cinnamon-mix with honey and peanut butter to spread on fruits
peppermint-puree fresh mint with yogurt or ricotta cheese
ginger-grate ginger with sesame oil 2 cloves mixed garlic low sodium soy sauce and 100% pineapple juice for marinade
crushed red pepper
sage-dip whole grain roll in olive oil not butter with sprinkle of sage and black pepper

Lean protein (skinless chicken, non fatty fish, low fat or nonfat dairy, beans and soy), whole grains ( whole grain bread, brown rice, barley, amaranth, quinoa), vegetables fresh or lightly cooked without sauces or butter, fresh fruit in moderation. Avoid highly processed foods-anything canned except vegetables, frozen dinners, bakery goods.

How old are you? It sounds like you are too young to be your mom's caretaker. Your mom is an adult and should be able to choose her own healthy diet. Get your mom to explain what a healthy diet is. It might make her a little more conscious of what she is actually eating and allow her to make some reasonable changes a little easier.
