Does anybody have a good recipe for waffles that don't come out hard and stiff?

I made waffles this morning and they were tough and I hope someone has a recipe that comes out softer.

    I might be wrong, but I thought that the high butter content in waffles contributed to it's crispy texture.

    If you don't like 'crispy' maybe you should try a buttermilk pancake recipe instead, but still cook the batter in the waffle maker.

    Waffles are suppose to be crisper than pancakes so its okay if they are a little stiff.

    BUTTERMILK WAFFLES

    1 1/4 cups of sifted cake flour or 1 2/3 cups unbleached flour

    1 1/2 tsp baking powder

    1/2 tsp baking soda

    1/2 teaspoon salt

    6 fluid oz eggs or 4 large eggs

    2 cups buttermilk

    16 tbsp. or 2 sticks of butter

    Sift together flour, baking powder, and salt. Beat eggs and buttermilk until well mixed. Add to flour mixture and beat lightly with a fork until flour is moistened. Stir in the butter. The batter should be lumpy. Over mixing will produce tough waffles.

    Bake until golden brown and serve warm.

    EASY HOMEMADE WAFFLES

    1 3/4 c. flour

    1 tbsp. baking flour

    1 tsp. baking soda

    1/2 tsp. salt

    2 c. milk

    1/3 c. salad oil

    2 eggs

    Preheat waffle iron. In large bowl with slotted spoon mix first 4 ingredients; add remaining ingredients and beat until well blended. Yield 4 cups (5 waffles).

    Tip: Slightly more oil increases the crispiness of the waffles. If desired, lay one or half a bacon strip (raw) on top of batter before closing waffle iron.

    This recipe takes a bit of time, but it is worth it.

    Gaufers

    (Raised Waffles)

    1 1/2 C. Milk

    2 tsp. Sugar

    1 tsp. Milk

    1 C. Butter or Margarine

    1/2 c. warm water (105-115)

    2 eggs, separated

    1 pkg or cake yeast, active dry or compressed

    Scald milk, stir in sugar, salt and butter. Cook mixture until lukewarm. Measure water into large warm bowl. Sprinkle or crumble in yeast and stir until dissolved. Add lukewarm milk mixture. Stir in flour, beat until smooth. Beat in egg yolks. Let rise in warm place, free from draft, until double in size or 1 hour. Stir down add more liquid, if necessary, to make softer batter. Beat egg whites till stiff, but not dry and fold into batter. Bake as needed in hot waffle iron. Serve for desert with powdered sugar or whipped cream, if desired.

  • go to freezer remove waffles...remove them from package and put in toaster on low setting til golden
