Curry: what spices do you use to real Indian curry?

All the commercial curry powders I've tried are too tame & weak.

Update:

I meant "to make" real curry.

    here's a basic recipe:

    1/2c coriander seeds

    4tbsp cumin seeds

    2tbsp fennel seeds

    2tbsp fenugreek seeds

    4 dried red chilis

    5 curry leaves

    1tbsp chilli powder

    1tbsp ground turmeric

    1/2tsp salt

    1. dry-roast the whole spices in a karahi, wok, or large pan for 8 to 10 minutes, shaking the pan until the spices darken and release a rich aroma. leave to cool.

    2. put the dry-roasted spices in a spice mill and grind to a fine powder.

    3. add the ground, roasted spices to teh chilli powder, turmeric, and salt in a large glass bowl and mix well. store in an airtight container.

    notes:

    1. try the recipe "as is" the first time so you get the idea of which component is doing what.

    2. once you're familiar with it, you can then adjust to taste - increase the chili for more heat, for example.

    3. go easy on the turmeric - too much will give the curry a lurid yellow colour and a bitter, almost metallic flavour.

    if you've never had it, try garam masala for a different kind of curry "hit".

    There are two sets of spices, Curry powder spices and Garam masala spices.

    Typical set of Curry powder spices is : cumin coriander fenugreek dried-ginger and Turmeric

    Typical set of Garam Masala spices is: Cinnamon, Cloves, Nutmeg and Black pepper.

    In addition we have Red Chili peppers and salt. These can be added along with Curry powder spices

    A typical curry starts out as a feedstock made of sauteed onions garlic ginger and fresh Serrano or green chilies. Curry spices are fried with feedstock then Tomatoes and Garam masala spices are added. The frying continues till the oil starts to leave the Masala. The mixture is called Masala an amalgamation of all spice flavors and colors in the oil. No you add the curry exemplar and water to make curry.

    I should mention that there are over 100 spices, but the typical set of Curry Powder and Garam Masala spices is a good place to start learning about curries.

    Chilies do not have to be used to get spicy zesty curry. The most overall necessary ingredients important to the spice mixture are Cumin seeds, then Coriander seeds. Oil and Fat are important in making a good curry. Ghee (clarified cow's butter) can be used instead of oil.Turmeric is the optional flavor and also a medicinal herb as well as yellow colorant.

    home made curry powder always make a difference.here is the recipe:

    Ingredients:

    6 dried red chilies

    1 ounce coriander seeds

    2 teaspoons cumin seeds

    1/2 teaspoon mustard seeds

    1 teaspoon black peppercorns

    1 teaspoon fenugreek seeds

    10 fresh curry leaves

    1/2 teaspoon ground ginger

    1 tablespoon ground turmeric

    u can increase the ratio accordingly and keep the powder in tight jar and use the powder in a curry whenever u want.

    Tumeric, cumin, cinnamon, coriander, garam masala, and several others.

    I'd recommend searching for the recipe online, as there is so much variety to curries that you'll want to ensure you're getting the right spices before proceeding.

    My family cooks with Lalahs curry powder. They also use garlic (which is very important) and cumin.

    You can add other spices if you like, but those are the main ingredients.

    curry leaves, tamarind, coriander, ginger, garlic, chili, pepper, cinnamon, cloves, cardamom, cumin, fennel or anise seeds, fenugreek seeds, nutmeg, coconut, turmeric root or powder.
