    Dry Rub

    3 tablespoons brown sugar

    1 1/2 tablespoons paprika

    1 1/2 tablespoons salt

    1 1/2 tablespoons ground black pepper

    1 teaspoon garlic powder

    Mis all dry ingredients. Rub in to tenderloin, let sit for appx 10 minutes. Place on preheated grill to sear and then let cook on med low until internal temp is 180.

    Pork Tenderloin

    2 1/2 lbs pork tenderloins

    1/2 teaspoon salt

    1/8 teaspoon pepper

    1-2 cup flour

    1-2 tablespoon olive oil

    1 (40 g) package Lipton Onion Soup Mix

    1 (10 3/4 ounce) can cream of mushroom soup

    Pre-heat oven to 375 degrees F. Trim as much of the fat off as you can. Season with Salt& Pepper. Roll tenderloin in flour and coat well. Heat olive oil in cast iron skillet. Brown the tenderloin on all sides. Mix the soups together with the hot water. Add the soups slowly to the roast allowing the onion pieces to rest on the top of the tenderloin as much as possible. Cover and bake in oven for approximately 1 hour and 15 minutes or until the inner temperature reaches 170 degrees (well done).

    GRILLED PORK TENDERLOIN SANDWICH

    1 pork loin, seasoned

    large hamburger buns

    Assorted Condiments:

    vine ripened tomatoes

    pickles

    onions

    lettuce

    mayonnaise

    mustard

    catsup

    This is a healthier version of the Iowa tenderloin sandwich. This sandwich is grilled, as opposed to breading and deep frying.

    Using a seasoned pork loin (store bought or marinate yourself) cut into 1 1/2 - 2 inch rounds and pound flat with a meat pounder. I like to use wax paper over the pork as I'm pounding it out to prevent splattering.

    Grill over medium heat until cooked through.

    Goes great with corn on the cob!

    Take a pork tenderloin and cover it with spicy brown mustard and then bake it for about 45 minutes (maybe a little longer depending on the size) Its really juicy and the spicy brown almost makes like a crust on it. mmmm! Something good to serve it with is mashed pot. with cabbage and canadian bacon in it. Once you make it your family will want it every night!

    Pan Seared Pork Tenderloin with Rhubarb Compote

    6 T olive oil

    1 1/2 T pepper

    1 T salt

    2 t dried sage

    2 t fennel seeds, crushed with mortar and pestle

    2 1/2 # pork tenderloins (2 large or 3 med) trimmed

    2 T fresh chopped parsley

    Mix 3 T. olive oil, pepper, salt, sage, and fennel in small bowl, rub mixture all over tenderloins, place in large baking dish and let stand for 20 minutes.

    Heat remaining oil in large nonstick skillet over med-high. Add pork and cook until brown on all sides, about 6 minutes. Reduce heat to med. cover and cook to 150 degrees on instant read thermometer, turning occasionally, about 8 minutes for medium tenderloins, 10 minutes for large.

    Let rest 5 minutes, slice sprinkle with parsley, and garnish with fresh sage sprigs. Serve with Rhubarb Compote.

    Rhubarb Compote

    6 C 1" pieces fresh rhubarb, about 2#

    1 1/4 C sugar

    1/3 C water

    Combine in heavy saucepan, bring to boil, stirring until sugar dissolves. Reduce heat to med-low, simmer until rhubarb softens and begins to fall apart, stirring occasionally, about 20 minutes.

    Fridge uncovered until cold, cover and fridge until use. Can be made 2 days in advance!

    This is excellent and really quite quick and easy! I've also been known to serve it with fresh, homemade cranberry sauce when rhubarb was unavailable!

    Marinate overnight in Allegro marinade, then cook on medium/hot coals til done. Slice into about 1 - 1 1/2 in thick steaks & serve with your fav sides.

    This time of year you can also cook on low for 10 - 12 hours in the crock pot w/just enough beer or dark lager to cover meat.

    Either way, the meat turns out tender & juicy each time.
