Simple and Healthy but filling recipes needed, please!?

I am in the midst of a serious weight loss and am getting bored with the same old low calorie, low fat meals. I love to cook but so many healthy recipes call for weird ingredients that I simply do not have in my kitchen at all times. I'd really like meals including chicken, lean ground beef and pork that can be made fairly quickly and with as few ingredients as possible. Any nutritional information included would be great as well. Also...I am not looking for links to recipe websites. If I wanted that I would be Googling!

    Low carb but with sufficient fats prevents the hungrys!

    If you have a bit more fat in your food plan you can eat much less food. But that also depends on your doing the low carb food plan.

    South Beach phase 2 works very well and the recipes included in the books are really worth while.

    Spinach leaves, cherry tomatoes - halved, cucumber wedges, hardboiled eggs - quartered, radish slices, pepper slices or rings, purple onion rings, 1/2 cup scrambled ground beef or left over roast cubed, or slices of any and all deli meats, sprinkled over with grated sharp cheddar cheese. Any dressing you like on the side! Less than 30 grams of carb! Very filling and you can vary the veggies to suit the day.

    I'm in the same boat and just made a simuliar post. Hmmm what can you make.

    sometimes something as simple as sauted onions on a hamburger patty is good. Serve with a salad or mixed veggies.

    I have a wonderful cold pasta salad I make;

    1 can red kidney beans (rinsed and drained well)

    1 12oz bag cooked and drained spiral corkscrew veggie pasta

    chopped bell peppers (I use red, yellow and green)

    I mix it all together with some green or black pitted olives

    Fat free Italian salad dressing

    Add some feta cheese to the top

    Makes a lot of food for leftovers and keeps in the fridge for a week. Tastes awesome!

    But your looking for lean chicken beef or pork with few ingredients so hmmmm

    I know what about throwing some of that chicken in a pot with some veggies, onion and potatoe and making a healthy chicken soup? Maybe add cabbage instead of potato?

    Butterfly chicken breast, pound flat, and stuff with mixed veggies, season, add a spritz of 0 cal butter, roll and wrap in foil. Bake at 350' for about 40 minutes. Open the foil and bake another 5 minutes to get a nice golden color.
