Looking for a recipe: SUNSHINE CAFE type pancakes - anyone have any?

They are kind of vanilla cakey in taste, with a hint of cherry & pineapple. Thanks for any leads!

Here is a recipe for vanilla cake like pancakes, I suppose you will have to add some cherry and pineapple extract or actual fruit bits.

    Ingredients

    1 1/2 cups flour

    1 teaspoon baking powder

    1/2 teaspoon salt

    1/2 teaspoon baking soda

    3 tablespoons sugar

    3/4 cup water

3 tablespoons butter, melted (will still taste amazing without)

    6 ounces non-fat vanilla yogurt

    3 eggs

    Directions

Spray griddle or pan with cooking spray and turn heat up to medium (375)

Mix together all dry ingredients, flour, baking powder, salt, baking soda, and sugar.

In a separate bowl mix together all the rest of the ingredients; water, butter (if desired), yogurt, and eggs.

Pour the dry ingredients into the wet ingredient bowl and mix until moistened (don't over mix or they won't turn out just right).

Using a 1/4 cup measure pour pancake mix onto griddle.

Cook for approximately 1-2 min or until it is bubbly on top and flip to other side, then cook for another 1-2 mintutes or until done.

Have you tried a web search? Sounds different though I try to stay away from white flour and sugars.
