I really need a quick and easy banana cake recipe preferably a microwave one, please help!

    The first one is for a microwave; however, I like the consistency of an oven baked cake a much better (but that is my preference) Here are several slightly different easy banana cake recipes for the oven as well. Hope this helps. Enjoy!

    MICROWAVE BANANA CAKE

    1/4 cup packed brown sugar

    1 teaspoon ground cinnamon

    1/3 cup finely chopped walnuts

    1 cup stirred whole wheat flour

    3/4 cup sifted all-purpose flour

    1 teaspoon baking soda

    1/2 teaspoon salt

    2/3 cup shortening

    1/2 cup packed brown sugar

    2 eggs

    1 teaspoon vanilla

    1 cup very ripe mashed banana

    1/4 cup milk

    Combine 1/4 cup brown sugar, cinnamon and walnuts in bowl. Mix well. Set aside. Stir together whole wheat flour, all purpose flour, baking soda and salt. Set aside. Cream together shortening and 1/2 cup brown sugar in bowl, using an electric mixer at medium speed. Beat in eggs, vanilla and banana. Gradually add flour mixture alternately with milk, beating well after each addition. Pour batter into greased 8-inch square glass baking dish, spreading batter slightly higher in corners. Sprinkle evenly with walnut mixture.

    Microwave (Medium setting) 9 minutes, rotating dish one quarter turn every 2 minutes. Place small pieces of aluminum foil over cooked areas of cake. Check the use and care manual for your microwave oven before using foil, because the magnetron tubes on some ovens can be damaged by foil. Microwave (High setting) 4 to 5 minutes, or until cake pulls away from sides of dish and top is done. Cool in dish on wooden board or heatproof surface. Serve warm or cool.

    EASY BANANA CAKE

    1 pkg. yellow cake mix

    1/8 tsp. baking soda

    1 c. mashed bananas (2-3 med. ripe bananas)

    1/2 c. chopped nuts (optional)

    Mix together the yellow cake mix as directed on the package, except, stir 1/8 teaspoon baking soda into dry mix before adding liquid. Also, use 1/4 cup less water than package directions. To cake mix add mashed bananas and nuts if desired. Bake according to package directions.

    1 pkg. (3 3/4 oz.) vanilla or banana instant pudding

    4 eggs (may use Egg Beaters)

    1 c. water

    1/4 c. Puritan oil

    1/2 c. nuts (optional)

    1 tsp. vanilla

    Mix all ingredients well. Pour into a greased 13x9 inch pan and bake in a 350 degree oven for 35-40 minutes. Cool and frost.

    QUICK AND EASY FROSTING:

    1 (12 oz.) container Cool Whip

    1 med. can crushed pineapple

    1/2 pkg. instant vanilla pudding

    Mix all ingredients well and spread on cooled cake. Store in refrigerator.

    1 box cake mix (white)

    3 eggs

    1 c. mashed VERY RIPE bananas

    1 tsp. baking soda

    1 c. sour cream

    Mix all ingredients well. Pour into greased and floured 9 x 12 inch pan. Bake for 35 minutes at 350 degrees.

    2 sm. boxes instant banana cream pudding (dry)

    1 c. water

    1/2 c. oil

    This is a delicious cake using that favourite of all fruits.

    Ingredients

    * 1/2 cup butter

    * 1 1/2 cups granulated sugar

    * 1 cup mashed banana

    * 2 eggs

    * 1 teaspoon vanilla

    * 2 cups all purpose or cake flour

    * 1 teaspoon baking soda

    * 1/2 teaspoon salt

    * 1/2 cup sour milk

    * 4 tablespoons melted butter

    * 1/4 cup cream

    * 1 teaspoon rum or flavouring

    * 3 cups, or less, icing sugar

    # Heat oven to 350 degrees.

    # Butter and dust with flour a square 9 inch cake pan.

    # Cream together the butter and sugar. Beat well.

    # Beat in banana, eggs and vanilla. Continue beating until smooth.

    # Blend together the flour, baking soda, and salt.

    # Stir the flour mixture into the butter mixture.

    # Beat in the sour milk.

    # Pour batter into prepared pan and bake for approximately 45 minutes or until cake tester comes out clean.

    # Remove from oven. Cool for 5 minutes.

    # Remove from pan and cool on rack.

    A really easy way to make this is to take a cake mix that you buy at the supermarket preferably vanilla and add 2 very ripe mashed bananas to the mixture. Mix it through and cook as directed on the packet but add 10 mins to the time. It should be nice and moist and taste pretty good...mine does.

    INGREDIENTS

    2½ cups self-raising flour, sifted

    1 cup caster sugar

    2 medium ripe bananas, mashed

    ¾ cup milk

    ¼ cup vegetable oil

    1 egg

    LEMON FROSTING

    125g unsalted butter, chopped, at room temperature

    ¾ cup icing sugar

    1 tablespoon lemon juice

    METHOD

    1. Preheat oven to moderately slow, 160°C. Lightly grease a 14 x 21cm loaf pan and line with baking paper.

    2. In a large bowl, using an electric mixer, beat together all ingredients until smooth.

    3. Pour mixture into prepared pan. Bake for 50-60 minutes or until golden and cooked when tested with a skewer. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

    4. LEMON FROSTING. Meanwhile, in a small bowl, using an electric mixer, beat butter and icing sugar together until light and fluffy. Beat in lemon juice. Spread frosting over cooled cake, slice and serve.

    1. Preheat oven to 350 degrees. Grease and flour a 9x13" baking pan or two 9" layer cake pans.

    2. Cream butter, sugar and eggs. Sift flour several times, then add the salt and baking powder to the flour.

    3. To the creamed butter mixture, add the milk and flour (alternating, beginning and ending with flour).

    4. Add vanilla and mashed bananas (with the baking soda added to the bananas) to this mixture.

    5. Bake layer cakes (9") for 25-30 minutes, oblong (9x13") for 35-40 minutes.

    Frosting Directions:

    1. Mix cream cheese and butter until smooth, add sugar and vanilla and blend well. Spread on cooled cake.

    I like common ingredients too, and quick and easy! My family loves this recipe, and I hope you will try it. You will need: 4 or 5 porkchops 2 cans cream of mushroom soup 2 cans green beans (any style) 2 cans sliced potatoes salt and pepper Lay pork chops on bottom of baking dish, or cake pan Layer, starting with potatoes, then green beans, then cream of mushroom soup. Salt and pepper to taste. Cover with foil, and bake for 35 minutes at 350 degrees. This dish is so easy, and it is really good.
