Re programable thermostat?

I'm building a solar collector. during the day the heat in the collector slowly goes up. As temp gets higher than the temp in the reservoir, I want a pump to turn on. in the evening the collector cools and the temp becomes lower than the reservoir and I want the pump to turn off.

Both temps can vary from -40 F to plus 180 F Does anyone know of a thermostat that will work in this manner

    Go to your local plumbing/heating supply house and get an aquastat.

    (Honeywell 4006 or equiv.) You can install an immersion well or buy a strap-on model.(No joke)
