Can I perform Beatles/Elvis songs, make own CD's and sell? Or are there copyright protections prohibiting me?

    That would definitely be a copyright infringement. Whether anyone actually bothers to sue you would depend on how successful you are: i.e., selling 40 CDs and playing at open mic is ok, selling 20,000 CDs or playing a large show might get you in trouble.

    You can do it, as long as you have the copyright holder's permission and pay them royalties.
