What do you think of spray on scents like Gulp or Carolina Lunker Sauce?
I have never used these I don't want to waste the money or mess my baits up. Most of all I don't want my tackle box stinking to high hell. But if it helps my catch rate I might reconsider.

I live and breathe fishing.
And I NEVER go fishing without some form of attractant. NEVER. (In freshwater and inshore saltwater fishing.)
Like BP said: It helps cover up human/man-made scent and has enzymes/pheromones that make fish hold onto your lure longer.
In my opinion, if you don't use some form of attractant on ALL your lures you are lowering your catch ratio by 30%-40%, (OR HIGHER depending on fishing situation).
Carolina Lunker Sauce, Berkley Gulp Alive, Kick'N products, Berkley Powerbait & YUM Crawfish are (in my opinion), the BEST attractants you can purchase.
However, most convenience stores like Walmart/Kmart rarely carry the above attractants.
In that case, even Baitmate is better than nothing.
Attractant controversy is similar to the Global Warming controversy- You can believe what you want but it works! (lol)
Bottom line- A typical bottle of attractant costs between $5-$13 and lasts 4-5 trips. Even if you don't "think" it will work , it can't HURT , (esp at that price).

I would give them a try, ive used them on a few occasions now and i do find that they work, berkley gulp spray is a good option as it allows you to add just enough to your bait without wasting any it also should not smell.

They should also make your soft plastic baits last longer and seem more real.

most are good if not all. at least the major brands.
they help to cover up smells offensive to fish. gas, oil, human.
they may even cause the fish to hold on to your baits longer (lures).
very good on soft plastics.
put a bit in the package with your worms and it keeps them nice and supple and tasty. doesn't hurt any tackle that l'm aware of.
