I made spare ribs the other night?

What can I do with the big hunk of meat that I trimmed from the rack?

    put it in the slow cooker for a few hours, when its all soft and cooked thoroughly, shred it like pulled pork and mix with bbq sauce. Use it for sandwiches, or just eat it plain with corn on the cob on the side:) yum!!

    If it is mostly meat, you can cube dice it, salt and pepper it and use it as you would use any stewing meat.

    If it is mostly fat but a little meat you can brown it in a hot oven, drain liquid fat and add to wine and a little stock or water for a rich sauce.

    If it is all fat all I can think of is to put in a pan at low heat to render the lard to use for frying potatoes or a great tasting shortening replacement.

    I normally cook mine with the ribs, put some bar-b-que sauce on it, slice it thin and make sandwiches.
