Saluto' salad dressing recipe?

I am looking for the recipe for Saluto's (in Gurnee, Il.) house salad dressing. It seems like it is a pesto base possibly with cucumber also.

I have tried searching, but so far nothing.

Any help would be greatly appreciated.

    I did my best to look for you. I even called them up and asked them if I could have the recipe. They told me no :P

    I don't have an italian salad dressing recipe for you but for dinner tonight I had a salad of baby greens dressed with Spengers Blackberry Basalmic Vinegar. I tossed in about a tablespoon of crumbled blue cheese and a few lightly candied pecans, it was awsome. Spengers vinegars are only available through mail order, and worth every penny. They are heavier and fruityer than most fruit vinegars and are a staple in my kitchen.

    I used to be a server there while in college and one of my jobs was making their salad dressing. It s not homemade. It s barely semi-homemade. Here s the recipe and it s very simple you ll have to figure out the quantities on your own.

    They buy 5 gallon buckets of premade Regular Pesto Sauce from Gordon Food Service in Kenosha. To each bucket they add 5 cups of vinegar, 1/4 cup of egg white powder and 3 cups of sugar and mix in a floor mixer with a whipping attachment until it gets cloudy and starts to thicken. You can easily do this at home. Take a quart of pesto sauce, a cup of vinegar and one egg white. Put it in a quart jar seal and shake till it starts to thicken. Most of the time when I made it myself at work I would leave out the egg white powder and nobody ever knew the difference.

    Soy bean oil, lots of basil, raw egg, sugar, a touch of white vinegar, lots of parsley, pepper, honey, salt. Mix in a vita-mix or blender. Mix on medium all ingredients except egg and parsley. When smooth, add eggs and parsley and pulse. Be careful not to pulse too many times or for too long or It will turn into mayonnaise. If you want to, you can add another egg and mix it until it turns into a thick mayonnaise- like spread. Very good on sandwiches and in a rolled turkey breast roast.
