I need a good fried or smoothered?

    FRIED POTATOES

    3-4 potatoes

    1/4 cup oil, approximately

    1 onion, chopped

    2 cloves garlic, chopped

    1/2 pound fresh mushrooms, unsliced (sliced, canned mushrooms can be substituted, if need be)

    1/4 cup hulled sunflower seeds

    salt and pepper

    Heat oil, add potatoes that have been washed and thinly sliced. Cook for 10-15 minutes, then add mushrooms, onions, garlic, and sunflower seeds. Salt and pepper to taste. Cover and cook until done, uncover and brown.

    OR

    COUNTRY FRIED POTATOES

    2 tbsp. butter

    2 tbsp. shortening

    Enough cooked, peeled potatoes to cover bottom of heavy fry pan

    Salt & pepper to taste

    Onions, finely chopped (optional)

    Depending on size, 4 to 6 potatoes should be enough or use what you have left from another meat.

    Melt butter and butter in large pan over low heat. Slice potatoes into shortening and add salt and pepper, also onions, is you are using them. Cook over medium low heat until a bottom crust forms and browns, turn once, serve hot

    OR

    SMOTHERED POTATOES

    4 med. potatoes

    2 med. onions

    2 tbsp. oil

    Salt & pepper to taste

    Slice potatoes and onions into 1/4 inch circles. Layer potatoes and onions in skillet. Add oil, salt and pepper. Cover, cook on low fire until potatoes are tender. Uncover. Turn fire up. When potatoes are brown, remove from heat and add. Serve hot

    OR

    SMOTHERED POTATOES

    White potatoes, peeled and chopped

    Onion, chopped

    Black pepper

    Salt

    Fried meat grease (bacon)

    Take approximately 8 medium size white potatoes, peel and chop into bite size pieces. Place in 1/4 cup fried grease in case iron skillet over medium heat. Add, into hot skillet, rest of ingredients, approximately 1 1/2 chopped small onions. Stir occasionally to prevent sticking. Cover with lid and stir approximately every 2-3 minutes. Cook for approximately 1/2 hour or until potatoes are done and lightly browned.

    OR

    SMOTHERED POTATOES

    1/3 c. vegetable oil

    3 lb. potatoes, peeled and sliced

    1 1/2 c. chopped onions

    1/2 tsp. black pepper

    2 tsp. salt

    1/2 tsp. garlic powder

    1/4 tsp. white pepper

    1 1/2 c. water (or chicken broth)

    1/2 c. green onions, chopped

    In a cast iron pan, heat oil 1 minute. Then add potatoes, onions, salt, garlic, both peppers; stir. Let cook 10 minutes. Let potatoes stick before you stir.

    Reduce heat and cook 20 minutes. Stir stir a scrape. Add 1/2 cup water, then cook 5 minutes longer. Add 1/2 cup more, then cook 5 minutes. Add last 1/2 cup of water and green onions. Stir and cook 5 minutes. Remove from heat and serve
