Good, trusted meatloaf recipe wanted?

I have lots of ground beef in the freezer, it was on sale and I stocked up. I'm going to make a meatloaf this week. I have a good recipe that we like, but I want to try something different. Does anyone have a recipe that is a good old tried and true family recipe?

    Try adding pancetta or crisp bacon to your mixture before baking.

    my Meatloaf Recipe

    simple meatloaf recipe that your family will like

    Ingredients

    • 1 1/2 pounds ground beef (leaner is better)

    • 1 cup 2% milk

    • 1 tablespoon Worcestershire sauce

    • 1/4 teaspoon dried sage

    • 1/2 teaspoon salt

    • 1/2 teaspoon dry mustard

    • 1/4 teaspoon fresh ground pepper

    • 2 cloves garlic, minced

    • 1 small onion, finely chopped

    • 1/2 cup dry bread crumbs

    • 1/2 cup ketchup or barbecue sauce

    Preheat oven to 350 degrees. Combine all ingredients except ketchup in a large bowl, and mix well. Place mixture into an ungreased loaf pan or shape into a loaf in an ungreased baking pan. Spread ketchup or sauce over the top of the meatloaf.

    Bake uncovered for 1 to 1 1/4 hours until no pink remains at the center of the meatloaf. If using a meat thermometer, the internal temperature of the meatloaf should be 160 degrees.

    After baking, let sit for 5 minutes before removing from pan and slicing to serve.

    Meat Loaf

    1 lb. lean ground beef

    1 clove garlic

    OR

    ⅛ teaspoon garlic powder

    1 small onion

    2 slices bread with crust

    ¼ cup milk

    2 teaspoons Worcestershire sauce

    1 teaspoon chopped fresh sage

    OR

    ¼ teaspoon dried sage leaves

    ¼ teaspoon salt

    ¼ teaspoon ground mustard (dry)

    ⅛ teaspoon pepper

    1 egg

    ⅓ cup ketchup

    OR

    ⅓ cup chili sauce

    OR

    ⅓ cup barbecue sauce

    Heat oven to 350∫. Break up the beef into small pieces in a large bowl,

    using a fork or spoon.

    Peel and finely chop the garlic. Peel the onion, and chop enough of the

    onion into small pieces to measure 3 tablespoons. Wrap remaining piece of

    onion, and refrigerate for another use. Add the garlic and onion to the

    beef.

    Tear the bread into small pieces and add to beef mixture.

    Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to

    the beef mixture. Mix with a fork, large spoon or your hands until the

    ingredients are well mixed.

    Place the beef mixture in the ungreased baking pan. Almost any size pan

    will work; just be sure the pan has sides on it to catch the juices that

    will accumulate while the meat loaf bakes. Shape the mixture into an 8 ◊

    4-inch loaf in the pan, and spread ketchup over the top.

    Bake uncovered 50 to 60 minutes or until beef in center of loaf is no

    longer pink. Cut a small slit near center of loaf; meat and juices should

    no longer be pink. A meat thermometer inserted in the center of the loaf

    should read 160∫. Let the loaf stand 5 minutes, so it will be easier to

    remove from the pan. Cut the loaf into slices.

    Best Ever Meat Loaf:

    * 2 eggs

    * 2/3 cup milk

    * 3 slices bread, torn

    * 1/2 cup chopped onion

    * 1/2 cup grated carrot

    * 1 cup shredded Cheddar or mozzarella cheese

    * 1 tablespoon minced fresh parsley

    * 1 teaspoon dried basil, thyme or sage (optional)

    * 1 teaspoon salt

    * 1/4 teaspoon pepper

    * 1 1/2 pounds lean ground beef

    * TOPPING:

    * 1/2 cup tomato sauce

    * 1/2 cup packed brown sugar

    * 1 teaspoon prepared mustard

    1. In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well.

    2. Shape into a 7-1/2-in. x 3-1/2-in. x 2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350 degrees F for 45 minutes.

    3. Combine the topping ingredients; spoon half of the mixture over meat loaf. Bake 30 minutes longer or until meat is no longer pink and a meat thermometer reads 160 degrees F, occasionally spooning remaining topping over loaf. Let stand 10 minutes before serving.

    This is a recipe I happened across about 10 years ago (and the leftovers make really good sandwiches):

    Meatloaf

    2 pounds ground round

    1 cup oatmeal or cracker crumbs

    1 cup evaporated milk or heavy cream

    1 teaspoon salt

    ⅛ teaspoon black pepper

    1 tablespoon onion flakes

    2 tablespoons Worcestershire sauce

    1 cup ketchup

    2 tablespoons sugar

    3 tablespoons vinegar

    ¼ cup water

    2 tablespoons Worcestershire sauce

    Preheat oven to 350 degrees. Prepare 2 quart casserole with non stick spray.

    In large mixing bowl, mix and combine well first 7 ingredients. Place mixture in casserole, packing down well. Form lip around the edges of meat mixture to hold in topping.

    For topping, combine and mix well last 5 ingredients. Pour over top of meat mixture.

    Bake in preheated oven for 1 1/2 hours. Remove from oven and let set for 5 - 10 minutes before slicing.

    This is Italian style meatloaf and it's really good;

    1 1/2 pounds ground beef

    2 eggs, beaten

    3/4 cup dry bread crumbs (I usually use italian seasoned bread crumbs and it's yum!)

    1/4 cup ketchup

    1 teaspoon Italian-style seasoning

    1 teaspoon dried oregano

    1 teaspoon dried basil

    1 teaspoon garlic salt

    1 (14.5 ounce) can diced tomatoes, drained

    1 1/2 cups shredded mozzarella cheese

    Preheat oven to 350 degrees F (175 degrees C).

    In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.

    Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C). Serves 6...

    This is my favorite. You can use ground sirloin in place of the turkey & whole eggs in place of the whites. Enjoy! Mozzarella Stuffed Loaf 1 1/4 pounds ground turkey breast 1 10-oz pkg frozen chopped spinach, thawed, squeezed dry 1/2 cup minced onion 1/2 cup seasoned bread crumbs 1/4 cup chopped fresh parsley 1 teaspoon dried oregano 2 egg whites salt and ground black pepper, to taste 1/4 teaspoon cayenne pepper (I omit when using beef) 4 ounces fresh mozzarella, cubed 2 tablespoons ketchup 2 tablespoons Dijon mustard Preheat oven to 375. In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half. Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top. In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicing.

    Ground beef (duh) (may substitute ground turkey or ground pork) Boiled rice

    Egg, 1 per pound of meat

    Sliced mushrooms

    Diced green bell pepper (or red, orange, or yellow if available)

    Diced onion

    Chopped celery

    Salt, pepper, oregano, parsley, paprika, garlic powder, onion powder, and lemon pepper to taste.

    Tomato paste

    Thick-sliced bacon

    Combine all ingredients except the last two, and put in a baking dish. Bake at 400 F for 45-50 minutes. In the last 10 minutes, brush with the tomato paste and drape the bacon oveer the top.

    Serve with choice of mashed potatoes, ramen noodles, pierogi, whatever you feel like. Bon Appetit!

    Ellen's Buffalo Meatloaf:

    * 1 slice multigrain bread

    * 1 pound ground buffalo meat

    * 1 onion, diced

    * 1 egg, lightly beaten

    * 1 teaspoon mustard powder

    * 3/4 cup canned diced tomatoes, drained

    * 1 teaspoon salt

    * 1 dash ground black pepper

    * 1/3 cup ketchup

    DIRECTIONS

    1. Preheat an oven to 350 degrees F (175 degrees C). Crumble the bread slice into crumbs and set aside. Grease an 8x8 inch baking dish.

    2. Thoroughly mix ground buffalo meat, onion, egg, ground mustard, tomatoes, salt, pepper, and bread crumbs in a large bowl.

    3. Form the meat mixture into a loaf shape about 8x4 inches and place into the middle of the baking dish. Apply ketchup to the top and sides of the meatloaf.

    4. Bake in preheated oven until meat is no longer pink and ketchup forms a glaze over the meatloaf, 1 1/2 hours. Let stand 10 minutes before serving.

    That's-a Meatloaf :

    * 2 pounds ground beef

    * 2 eggs

    * 1/2 cup tomato sauce

    * 3/4 cup fresh crumbled bread

    * 1/4 cup grated Parmesan cheese

    * 2 cloves garlic, minced

    * 2 tablespoons dried parsley

    * 1 teaspoon dried oregano

    * 6 slices ham

    * 6 medium slices mozzarella cheese

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. In a large bowl, combine the beef, eggs, tomato sauce, bread crumbs, cheese, garlic, parsley and oregano. Mix well and form into an 8x10 inch rectangle.

    3. Place the ham over the rectangle mixture, and then the cheese over the ham. Roll up jelly-roll style so that you end up with a rolled loaf about 5x8 inches.

    4. Place roll seam side down into a 5x9 inch loaf pan and bake at 350 degrees F (175 degrees C) for 75 minutes. Drain excess fat.

    Tantalizingly Tangy Meatloaf

    * 1 pound ground beef

    * 1/2 cup dry bread crumbs

    * 1 egg

    * garlic powder to taste

    * 1 dash Worcestershire sauce

    * 1/3 cup ketchup

    * 1/4 cup packed brown sugar

    * 1/4 cup pineapple preserves

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. In a large bowl, combine the ground beef, bread crumbs, egg, garlic powder and Worcestershire sauce. Mix well, and place into a 9x5 inch loaf pan.

    3. Bake in preheated oven for 30 to 50 minutes.

    4. Meanwhile, in a separate medium bowl, stir together the ketchup, brown sugar and pineapple preserves. Pour over the meatloaf about 20 minutes before removing from oven.

    Easy Meatloaf:

    * 1 1/2 pounds ground beef

    * 1 egg

    * 1 onion, chopped

    * 1 cup milk

    * 1 cup dried bread crumbs

    * salt and pepper to taste

    * 2 tablespoons brown sugar

    * 2 tablespoons prepared mustard

    * 1/3 cup ketchup

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.

    3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

    4. Bake at 350 degrees F (175 degrees C) for 1 hour.

    just mix the beef with 1 or 2 eggs, a cup of bread crumbs, 1 packet of onion or mushroom soup mix and a half cup of ketchup. Bake, serve with mushroom gravy. You can put chopped onions or mushrooms in the meatloaf if you want as well.
