I need a substitute that's like eggplant?

I'm making Ratatouille but my girlfriend isn't a big fan.of the eggplant, any suggestions?

Lexi, thanks for clearing that up for everyone above you, I found myself rolling my eyes by the suggestion of Zucchini.

    I would use portabella mushrooms if for no other reason the consistancy of them. Be sure to adjsut for the water content in them.

    Hope she is a fan of mushrooms.

    Not really Ratatouille with out the eggplant though right?

  • yellow squash/ butternut squash.

    Zuchini already goes into Ratatouille so no use substituting egg plants with more zuchini.
