How do you make really fluffy omelets?

I make OK omelets, but they are more "crape" like...how can I get them to be more fluffy?

Also, what are your favorite things to put into an omelet?

    Make sure you allow your eggs to come to room temperature before beating them. Warm eggs accept more air and make for a fluffier omelet. You may also try whipping in a small amount of pancake batter. This will help the omelet rise but will be undetectable in the final product. (IHop does this with its omelets.)

    As for fillings, I like the old ham & cheese standard.

    You have to make sure that your pan is heated enough. When I pour the egg mixture in the pan, I take it away from the flame (to avoid burning at the bottom). Then I lower the the flame into really low and cover the pan. I let the pan sit on the stove top for some time. If you use a glass cover, you could see your omelet is getting all fluffy in the pan. Then I take it off the pan and serve.

    You can add milk in your egg mixture, I never did. Some times I add pickled jalapeno peppers or olives or cheese after I pour the mixture to the pan. You can add anything at this point to satisfy your taste buds.

    Beat the eggs with a little milk or cream really well. They should be foamy when you pour them in the pan. Also, make sure your pan is hot, but not too hot. Don't over cook them.

    One method of omelet making is to scramble the eggs when you first put them into the pan. Once they begin to set, let them form a single sheet of eggs. You can also flip them, but do not let them brown. The omelet will come out really fluffy if you use this method correctly.

    I like to put a pinch of minced garlic, minced onion and Lowry's season salt in with the eggs before I whip them. Sour cream or cream cheese is also good and shredded pepper jack, spinach, mushrooms and chicken are some of my favorite omelet ingredients.

    Try putting a splash of milk in scrambled egg and then cook it. It comes out fluffy. My dad does it.

    I like omelets with cheddar cheese and cut up turkey lunch meat. Then I cook it and add salt and pepper. You can also cut up some bacon and put in in the mix too. Yum!

    Your omelets might be coming out too thin because your pan it to large. Also, don't use a super high heat.

    For each egg, you add 1/2 a tablespoonful of water. You add that before you mix the egg. Or you can whip up the egg white and incorporate them before you beat the whole thing into an omelet.
