Mussels...I am totally lost with this one...?

I love mussels, but if I had to say there was a food that I was afraid to cook it would be mussels.

1. How do I buy them - I mean how can I tell they are fresh/good quality? What kind (species) is the best, etc

2. How in the heck do I clean them? Detailed would be nice as I have never done this before in my life. Can I buy them already cleaned, like you can buy deveined & shelled shrimp (I hate deveining shrimp too)? Any brands?

3. A recipe. I do not want them in a marinara sauce. I really like the appetizers you get at restaurants where they are in some sort of butter, garlic, maybe lemon. Any tried and true recipes?

    Normally, they are bought in the shell. Please ask the person at the seafood counter to let you smell them. They should not have an aroma. They should all be closed. If one or two are not closed, thump them with your finger and if they close, they're still good.

    To clean them, scrub the heck out of them. There is normally a 'beard' on them (hairy stuff protruding from between the closed shell). Pull that out. It is sometimes a bit difficult, so just give it a yank.

    Once they are cleaned and debearded:

    Heat some dry wine in a pan, add a bit of minced garlic and dried chili flakes; bring to a boil. Add mussels, bring to boil, reduce to simmer and cover. They don't take too long to cook. Check after a few minutes.

    If you want to be adventurous, you could always make a coconut milk and lemongrass sauce to go with it.

    Well when they are fresh they will be closed and have no stinky or fishy smell. Just take a bowl of cold water and swish them around in it to clean them. Im pretty sure you can buy them cleaned also. A good recipe is you take a pan and add a little olive oil and sautee some garlic but not to long to not burn it. Then add a few tablespoons of butter and 3 tablespoons of lemon juice and a handful of cut up parsley. Then add 2 cups of white wine. Add the mussels and put a lid on them.About 5 minutes later it will be done. As soon as they open up they are done. Check them often because if they are over done they will become chewy.
