Fajita steak makes a great salad! Just top some romaine with tomatoes, cucumber, and any other veggie you want along with your fajita meat. Use a vinaigrette dressing to go with the smoky flavor of the beef.

Make a stirfry with some rice or noodles...

Chop it up into bitesized pieces and make a pot pie (if you dont have a recipe for pot pie, there are many to be found here: http://allrecipes.com/Search/Recipes.aspx?WithTerm...

Remember, when you are making a recipe, you can modify to suit your own tastes/what you have on hand. So if one calls for leftover roast, substitute with your leftover fajita meat)

    Good luck!!

If you have some large tortillas, make some burritos! I usually make up some rice to fill them. I take white rice, cook it. I add some salsa, frozen corn, and cilantro. Delicious. Cheese, sour cream, gauc, meat, and rice all wrapped up in a big tortilla is my kinda burrito. OR! you could make breakfast burritos. I take an egg and fry it up. Add some cheese, meat, and salsa to it. Wrap it up in a tortilla and dip in hot sauce and/or sour cream. One of my favorite breakfasts.
