Here is my own stew meat stew concoction for the crock pot. I fix it the night before, stick it in the fridge, so I can throw it on in the morning. I normally use stew meat, but should taste fine with pork.
Slivered onion
stewing beef or pork cut into pieces
chopped celery
chopped carrots
some cilantro (optional)
1 can diced tomatoes
1 can of red beans
1 can of black or navy beans
A few dashes of worcestershire sauce
a few dashes of red wine vinegar
you can add potatoes but I don't
Same goes with cabbage
Must have 1 beer. 1/2 goes in the crock pot, the other 1/2 you drink
Combine all in the crock pot. Setting on high for about 5-6 hours. Then low to keep it warm till it's ready to eat. I will cook rice to lengthen the stew to eat throughout the week.

Here's one that I particularly enjoy for Pork & Sauerkraut with Potatoes:
2 cans (16 oz. each) sauerkraut, undrained
1 cup thinly sliced onion
2 medium baking apples, peeled and sliced
1/2 cup dark corn syrup
2 bay leaves
1 teaspoon caraway seed
1/2 teaspoon pepper
3 large potatoes, peeled and cut into 2" chunks
6 pork steaks
In a bowl, combine sauerkraut, onion, apples, corn syrup, bay leaves, caraway and pepper. Spoon half into a slow cooker; top with potatoes. Broil pork steaks 6" from heat for 3-4 minutes per side or until browned; place over potatoes. Spoon remaining sauerkraut mixture over pork.
Cover and cook on high for 1 hour. Reduce heat to low; cook 4-5 hours longer or until vegetables and meat are tender. Remove bay leaves.
It's a great combination of flavors and really tender! Enjoy!

1 small green bell pepper, chopped
1 (4 oz.) can mushrooms, drained
