a better way to make Hard boiled eggs?

need a better way of making boiled eggs so they peel easier.

currently i get the water and eggs to a boil then covering for 20 mins with heat off then rinsing with ice cold water but still i get some eggs that won't peel (could they be over-cooked or too many days old?)

    You should never actually boil hard boiled eggs. The water should be just about to boil (bubbles forming, but not yet boiling). Also, the eggs should be brought to room temperature before putting them on to "boil". Cover eggs with at least 1 inch of water then cover with lid. Bring to just before boil state. Remove from heat and leave covered for 15 to 17 min. Then pour off hot water and rinse with cold. Start peeling at large end where there is a bit of space too. That seems to help.

    The fresher the eggs the hard to boil. When you get the ones that are easy and nicely to peel, that means they are older. So when it comes to boiled eggs, the older the better.

    I peel my eggs when they are still warm. I crack them on the bowl then peel. Always worked really well for me.

    I have a little "cooker" that does it for me. And they always peel really easy and I don't have to remember how long I have had them going.

    It was only 14 bucks at Macys. :)
