Not all Chinese roof tops are pointed. The Chinese are great believers in symbolism, such as having high thresholds at there doors to prevent entree of evil and one crosses it differently according to there sex. Heaven is often refered to in their beliefs. Three reasons for pointed roofs: 1. To synbolize pointing to Heaven. 2. Adds beauty to the building. ie: The pointed section of the roof is flared out near the eves to a much lower pitch. Strength: The steeper a roof( the lesser the roof pitch varies from the perpendicular) the easier it is to support loads and easier to construct. and far less bracing is needed. This allows high open space inside the building. The flared portion of the roof adds support to high pitched roof.

Even Feng Shui says it is good , I don't think their roof point like arrows because of Feng Shui, it is because they have heavy rain and some part heavy snow, so pointed roof suitable for that kind of weather.

Well, given that reasoning, I would guess that it has something to do with a belief that such design would ward off danger. However, I always thought that it was simply a cultural addition for the ornate appeal.
