Any ideas for a healthy dinner for a diabetic type 2? I need to impress.?

I need to cook dinner for two tonight, and I want to impress because this is a special occasion. No pasta, rice or bread, I guess. Any ideas would be greatly appreciated.

    TX2 is right, not only am I a former chef, I am to am a type 2 diabetic, and whether they are a meat eater or vegetarian like me the key is to cook with less fat, lower carbs, a balanced diet and if they will tolerate it the use of sweeteners to sugar, I used the Splenda types, white and brown.

    I would find out what kind of thing the person your cooking for likes and then adapt the recipes for them you will enjoy the food to, but as you have said no pasta or bread and no rice, then small portions of meat 2 veg and a fruit based dessert, maybe with yougart.

    I like chicken when I was eating meat, but now do different thens with veg, tofu, tofu by products like TVP, Seitan, tofu puffs, Quorn, but for a nice dinner why not make a stir fry, it is easy and you can combine alot of veg in one dish and nice dessert, even a soup as an appetizer or salad to.

    My husband is diabetic, and you don't really need to cook differently. Just go lightly on the carbs, and don't use sugar or other sweeteners (which you don't normally use in cooking). You can substitute Splenda in virtually any cakes or cookies for dessert. BBQ salmon steaks are great, and good for your cholesterol - I rub them lightly with olive oil and sprinkle with garlic salt, pepper & lots of dill - and do the same thing with zucchini & bell pepper halves and grill those with it. Serve with a citrus fruit salad and some brown rice. ... Or do Cornish game hens in the oven (brush with melted butter & sugarfree orange marmalade as a glaze) with steamed edaname (less carbs than lima beans) and carrots, with a green salad and fruit salad....

    It is better for diabetics to eat slow burning carbs: potatoes, peanut butter, vegetables, breads, dairy products, etc. VS. fast burning carbs: candy, sugared soda, cakes, ice cream, anything high in sugar. Just know what your carb/insulin ratios (how much insulin you have to give yourself for the amount of carbs you are intaking) are. Adjust according to the amount of carbs(sugars) you are intaking. And, you should be fine. Natural sugars are better than processed sugars.

    BBQ Beef Brisket (in crock pot or slow oven),baked beans,potato salad, deviled eggs
