This one won the contest when I was in high school... A girl put a tooth in a glass of cola, and another tooth in a glass of water and then noted the decay of the tooth in the cola after a few days. It was gross, but cool and simple... all things those judges like. I think you could use bone that you can get from a butcher... or chicken bone if you don't have teeth hanging around.

I just won the regional science fair and my project was on saving money around the house. A easy science fair project would be looking at how much money you would save if you changed your house lighting from incandescent to fluorescent bulbs. If this is just for school this would be a good project but if you were going to put it in your regionals you might win some money (I just won $850) because everyone is looking for environmental projects. You could tie it in if you save however much money you also save however much CO2 going into the atmosphere.

Everyone's going grreen. Why not do the usual photosynthesis project. Show what would happen if there were no sunshine for plants to grow. Get 2 plants, one plant that is healthy and one that is deprived of the sun and show the differences in their development. Explain photosynthesis, and show why human beings need green plants...i.e. oxygen, food, etc.
How bout that?

Solar balloon. All you need is garbage bags and tape. You also learn about some fun stuff like the kinetic gas law and density.

Test to see what type of soda shoots higher when you drop 5 Mentos in it! I did that one year and I had a blast!

you don't say how old you are or what kind of science, but doing one on fire safety (the science of fire and how to keep one frokm starting) would be good.
this site explains the "fire triangle" heat/fuel/oxygen. with all 3 at the right level, a fire will start. to put out a fire, take away something from the fire triangle. if you cool it, the fire goes out. if you take away the oxygen, the fire goes out. if you take away the fuel, the fire goes out.

This site explains about fire extinguishers, and how different kinds put out different "classes" of fires.

This site explains what a class A, B, C, and D fire is, and how to put them out. it is a good science project, and it will help people be safe and may even save a life one day. BUT UNDER NO CIRCUMSTANCES SHOULD YOU INVOLVE FIRE IN YOUR PROJECT!!!!!!!!!!!
