looking for some good mothers day lunch recipes please?

I'm having my godmother over for lunch on mothers day, my mom passed away when i was 16 so she has been my savior thru the years and my children even call her nana now! she is soo amazing! my son asked if she could come over fr mothers day and she said yes, but now i want to make a lunch that is as amzing as she is but still somewhat easy so i can spend some time with her, any ideas (no fish please she isnt a fan) i want to make lunch maybe a nice drink perhaps a salad and def. desert considering a trifle for desert though but any ideas would be most welcomed?!

    Why not a picnic of sorts. Make roasted chicken and serve with side dishes that could include Blue-cheese cole slaw, bourbon baked beans, orzo pasta salad, caprese salad or a napa cabbage salad.

    Here is my recipe:

    Herb Roasted Chicken Breast

    2 - 16 to 24 oz bone-in chicken breast

    2 tablespoons butter, room temperature

    1 teaspoon oregano

    1 teaspoon Mrs. Dash garlic & Herb Seasoning

    1/2 teaspoon pepper

    1/2 teaspoon kosher salt

    Olive Oil

    # Preheat oven 425 degrees. Remove any excess fat from chicken, set aside.

    # Mix butter with oregano, Mrs. Dash, Pepper & Salt. Gently lift skin and add 1/4 butter mixture, spread evenly under skin, use another 1/3 of the mixture to coat underside and tender side of chicken breast. Repeat with second breast.

    # Place chicken in glass baking dish, lightly coat with olive oil. Place in oven cook uncovered 20 minutes.

    # Lower oven temperature to 350 degrees, cook 15 minutes. Remove from oven, tent with foil, rest 10 minutes.

    You can use thighs as well and if the chicken breast are smaller just adjust the cooking time by 5 minutes.

    Have you thought about maybe taking her out? A mothers day breakfast would probably be the least expensive if your funds are limited. Your breakfast does sound good though! You could always surprise her with that and then maybe take her out for soup and salad or soup and a sandwich. If you do decide to make the lunch yourself, don't do the ramen. Pick something a little more sophisticated. The sandwich would depend on what she likes. To add a little flair, serve it up with some grapes or sliced melon like cantaloupe on the side. Don't forget the single rose in the vase! That would be the perfect touch. :)

    fruit punch served in a pretty bowl

    brownies, or cookies or pineapple upside down cake
