What is suet and how is it used?
I have a recipe that requires suet to make dumplings. Where do I get suet from? I have never used it. I don't even know what it looks like.

I am a former chef and while the first person is very wrong, the other 2 are no different, correct it is beef fat, from around the kidneys, and is not solid, it is grated or chopped, and is use mainly for steamed puddings (savoury and sweet) in raised pie doughs for pate, in Christmas pudding and for Steak and Kidney pudding done on a bowl known as a basin, not sink.
It is not used as much as it use to be as it is high in saturated fat and calories like pork lard it is nice in pastry's, I like it for meat pies over fruit type, it is also used in the famous english dessert Spotted Richard, you cannot say the real word on Yahoo.
You can use veg shortening instead.

I am a former chef and you do not need to boil it, but for a flakey pastry for savoury pies or puddings, if it is chilled it melts slower and makes a better crust. Suet is the fat from around the kidneys in a beef cattle, I use it for Xmas pudding, Spotted D**k, savourys like steak and kidney pie, pudding, steak and mushroom or steak and oyster pies. While it is a good fat for cooking, it is not exactly dietetic, but the use used portion can be frozen until the enxt time, that is how I find it here in my shops in Canada. But it finely chopped almost a ground texture.

You can use suet to make Tallow Oil ... which is supposed to be better than coconut oil for the skin.

Suet is hard beef fat. You can get it at the meat counter of your local store. I use it in one of my chili recipes. You melt it down,save the grease, and throw the rest away. I think I'll make chili today.

Suet is basically lard, though you could be able to substitute shortening to cut the saturated fat.

suet = solid beef fat
lard = solid pork fat
it is usually rubbed b/t the fingers into dry ingredients, the warmth of your fingers softening the suet. You can probably use solid shortening instead.
