The word vegetable is a grocers term, not a botanists term. Since corn is sold in the produce section of a supermarket, it is considered a vegetable (to a grocer).
To a botanist it would be a grain

A nutritionist would consider it a grain. Reason being if you replace a serving of grains with corn you will not miss out on any nutrients, but if you use it as a vegetable you will miss out.
